Pizza Romana
A NOTE AND A BIT OF HISTORY
The roman style pizza is called “pinsa”. The word comes from the act of pinching (pinsare). That is how the pinsa dough is modeled before entering the oven. It, also, differs from the popular pizza by the flours that are used to make it. It is a mix of 3 (soy, rice and wheat flour). It needs higher hydration and a longer time for the growing process. All of this combined makes a very high digestible and fluffy crust. Having it simple as a Margherita or adding many more toppings is up to you. Whatever you decide, remember to make a party out of it! Whoop-whoop!
